Knol Khol (Ganth Gobhi) is a greenish white colored big and round vegetable with extrusions that can be white, purple or green. Popular in Kashmiri cuisine, the tuberous vegetable has a mild and sweet taste.

Nutritions

A good source of Thiamin, Folate, Magnesium and Phosphorous, it is rich in Dietary Fiber, Vitamin C, and Vitamin B6. Its anti-oxidant property helps the human body from diseases especially cancer. Uses

It has a turnip-shaped overgrown stem which is the usually eaten part with leaves sprouting from it. It can be peeled and grated or chopped to prepare Knol Khol, Cucumber or salad. Alternatively it can be mixed with other salad vegetables to make a Mix Salad. You can prepare Knol khol Kurma.
